When The youngest Cape Winemaster Ever, Brendan Butler, stumbled across a gnarled Syrah vineyard basking in the sea breezes of Hermanus. The late ripening syrah is hand harvested A portion is whole-bunch fermented, placed into stainless steel red wine fermenters and with de-stemmed and partially crushed berries added. 8 day fermentation with a further 5 days on skins. The individual components were matured for 12 months prior to bottling in a combination of seasoned barrels and Flexcube tanks.
